 7 tablespoons lard or shortening
 1/3 teaspoon salt
 2 drops butter flavoring
 2/3 cup cake flour
Water Layer Dough

 1 tablespoon lard or shortening
 1 teaspoon vegetable oil
 3 tablespoons water
 2/3 cup cake flour
 1 tablespoon sugar

Directions

 Mix together the ingredients of the oil layer dough. Form into a square, wrap and chill until firm.
 Mix together the ingredients of the water layer dough. Form into a square, wrap and chill until firm.
 Dust working surface with plenty of cake flour. Place water layer dough on top of the oil layer dough. Roll out into a rectangle. Divide dough into 4 parts and fold. Rotate 90 degrees. Roll out and divide into 4 parts and fold again. Repeat 4-5 times.
 Roll out dough to 1/4-inch. Cut with round cookie cutter slightly larger than the diameter of the tart shell tin.
 Press dough into tins. Shells can be frozen.
